The most distant star ever observed may turn out to be another stellar object. And further studies conducted with the James Webb space telescope are needed to discover the true nature of this mysterious stellar object.

So if the universe is thought to be about 14 billion years old, in order for an object to be about 28 billion light years away, wouldn't that imply that we're on edge of the universe and Earendel is on the extreme opposite edge?

Or is this changing the way we think about the universe and meaning it may be older than we think?

The size of the observable universe is estimated to be about 93 billion light-years in diameter. It refers to the distance light has traveled since the Big Bang (some 13.8 - 14 billion years ago, as you said), so 28B LY here is nothing unusual in that grand scheme. @Dr. X is correct with their comment.
