Actually they are releasing 12.5 for a ton of phones. There have been no 12.5 cancellations that I know of, though many of the phones are still in beta stage.
They are taking long, but in many cases MIUI 12.5 means going from Android 10 to Android 11 too, so it's double the work.
Going from MIUI 12.5 to 13 should be less complicated.
