There is an exploding EV demand in Europe, but it seems that other than Norway and Spain, the rest of the countries are increasingly buying every brand other than Tesla.

All of this is likely carried by the "demand in more than European car markets" part of the equation. Those "very good sales figures" might not be in relation to EU if this factory is biulding for other markets.
With the arrival of the Chinese, Tesla is catching up, but the Chinese have no compassion for Mercedes, VW, Renault, and Seat, European brands whose sales are declining.
At this rate, it's possible that European car companies will collapse in less than five years.

Yup, European brands will have a hard time since a large chunk of their sales is/was in China. American brands already lost all of their market share there (except Tesla).
I like how in China there's so many economical pure EV alternatives.
Where as in the West it's like literally just Tesla.

Doesn't Europe have incentives for those buying EVs made in Europe? That is probably why. Also, Model Y still remains EUs best selling EV.

Because for traditional automakers, a majority of them have their investments in ICE cars. This made it harder for them to transition to EVs. Especially people expect EVs to be more technologically integrated, where as many traditional companies are still using junky interfaces due to no software experience.
In comparison, China had virtually 0 investment in ICE, most of their ICE tech was given to them for free when western manufacturers wanted to do business in China. As such, transitioning posses little issue to them as they don't need to worry about sunk investment.
