Because the game is completely redone from ground up, using custom coding and his own assets Nintendo can't touch it. If he used any of Nintendos stuff then he would get into legal issues.
It's amazing to see how The Legend of Zelda: Ocarina of Time continues to inspire fans even after all these years! The Unreal Engine 5 remake looks incredible, and I can't wait to try out the demo.
