GOG will attempt to keep the game as close to its original state as possible. If necessary, it will add quality-of-life improvements such as support for modern controllers, localization, and cloud saves.
What exactly is "new" with this program? They have done these exact things since the beginning, otherwise some games wouldn't have worked on modern platforms.

There were games that hadn't been maintained for a decade or more. They're doing great work on quite a large amount of them as of late.
They are doing good job but... they lacking a ton of great games from the past like Diablo II, Grand Theft Auto and especially Need For Speed series along with Colin McRae Rally.
