Would I personally pay $3,000 for this, when I can get an amazing Windows machine with a better keyboard, more ports, and a more compact design for $1,000-$1,500 less?

No, but my company probably would, and that seems to be what Apple is targeting: technology professionals who can expense it (and perhaps some wealthy college students).
I heard some buy Apple mainly for coding, also color management is slightly better, but I agree that it's really not worth the price.

Well OLED for work device is a fail because of the static image that damages OLED panes and which you'll have on screen the majority of the time. But micro led rules, waiting for them.

Although the upcoming 16-inch MacBook Pro will target professionals who have a generous budget and is rumored to start at US$3,000, we are also hearing that Apple will not move to an OLED panel. The yet-to-be-confirmed portable is expected to feature an LCD panel with a resolution of 3,072 x 1,920 pixels.
