To actually have "focus-racking" it is necessary to play with depth of field, and that means creating some background blur, it isn't just about changing focus in a smartphone camera.
And you don't really need to worry too much about how it changes focus. Apple made it possible to edit the focus point in post-edit, using an Apple app.
