The Paper Boy S3 shows what a Nintendo Game Boy with an E-Ink touchscreen would look like. This modding project combines an M5PaperS3 developer kit with an open-source emulator, and despite hardware limitations, it does a surprisingly good job of emulating a Game Boy.
