Because many people buy laptops and just use them as desktops. All they care about is the ability to move it if needed easily or they don't want it taking up space.
The point of a Minipc is they are cheaper than laptops as you are paying for a monitor, keyboard, touchpad. So you can easily save 500 bucks or so. Not to mention laptops tend to have worse thermals due to form factor constraints.
And these days there are even usb-c monitors so you can use that for portability, a bit less convenient than a laptop of course but if you hate laptop keyboards due to poor key travel and prefer a mechanical keyboard you bring, then it is not that much

These things can do more than just game, it can be used as a home AI server. It can run large models locally so you don't send your personal information to tech companies. It can even beat a 5090 in AI tasks in large models (due to ram constraints, obviously the 5090 would win in smaller models that fit into ram)
HTPCs these days are more than just a TV console station. Many use them for many other tasks as self hosted home servers. Because it is already running 24/7 so why not?
