Tails of Iron DOES have an easy mode in the settings, at least the PC version does.  I think it was added in one of the updates.

This game may look like a hand-drawn fairy tale, but it's actually a tough Souls-like adventure. If you're into challenging combat, Tails of Iron could be worth checking out. It's received great reviews and is now available for just $5, down from $25.
