----- "some apps on the tablet that can interact with the camera or accessories like a remote, right?"

Oh, no. Kodrut, you need more to understand about the camera.
At a high-class camera, the Live-View mode and HD-video are directly capable of outputting from the HDMI-out port of camera, rather than the viewing in field is just in a merely 3-inch screen of the camera body.

Also, the camera will automatically play back the just taken each photo by every time shutter, which the high-class camera is also whilst outputting into the HDMI-out port, so you can use an outer monitor of 8.5-inch screen and is also automatic playback each photo from the camera, no longer must operate an OS at the viewing. Makes you can more focus on camera operation, but a larger outer monitor is whilst available.

Taking HD-video can be directly outputting from the HDMI-out port of camera, rather than just doing of record at the flash card.

you can access the following websites, please note, it is still very trouble and limited to single brand camera, while capability is also unideal. Also, in Windows 8.1 has no similar apps.

If a tablet comes with an HDMI-input feature, will resolve all of matters.
Also, nobody who are willing to whilst carry around the two devices -- a tablet and another field monitor, especially a long journey over hill and dale.
So, to do it 2-in-1 to be the one best way, (2-in-1: the HDMI-input feature added to a tablet).

----- "my professional photographers friends have A LOT of cards to carry around, then they process the stuff at home on their computers."
Please talk a field monitor and viewing photos, as well as meanwhile a journey, and not saying the home to do post-process, thanks.

Always is merely to use A LOT of cards?
If that is just a newsman shooter and is fully nothing to the art photography, which case is possibly the only exception.

P.S.
If Intel is still not clear about all above, continues turning a deaf ear, which is a really extreme bad thing.

Sony Field Monitor CLM-V55 (HDMI-input), a not bad monitor, but is not ideal, merely a 5.6-inch screen, and lacks the tablet feature.
