The biggest bottleneck of the iPhones being releases is the slow lightning port for data transfer speeds between the iPhone and the MacBook Pro's. The MacBook Pro's come with Thunderbold 3 at 40Gbps speeds and the iPhone comes with snail crawling data transfer speeds. Try syncing a 80-100gb iPhone with iTunes and see how long that takes as it needs to create a new backup each time while syncing.
