An FCC listing reveals that the Oculus Go will come in 32 GB and 64 GB variants. Apart from the storage differences, both models are identical in all other aspects.

why snapdragon 821? 845 is on the way and they decided to stick with "ancient" technology

This could have been in development for quite some time. At that time, the 821 was the best option in terms of speed and price.
