Xiaomi began the MIUI 12.5 rollout for the Redmi Note 10 Pro last week, but is now expanding it to include the European model of the device. This means that the global, Indian, and European are now receiving the MIUI 12.5 update, albeit only in stable beta form.

Can you tell me difference between stable beta and "later" rollout? I have done ota update to 12.5.1 in europe without any knowlege cause no info was provided about "beta", only wordstable was in description.
