Seems like the Core M3 might be a little underpowered. Would have liked to see an actual i5 like the last gen. Why didn't they just do that?

It's a FANLESS ultrabook, they have other high-end ZEN ultrabooks that will feature i7 skylake.

Both the UX501 and G501 will be updated with Skylake before the end of the year. We don't yet know the exact availability date.
